Ingredients for Fresh Lasagna Sheets
300 gm Flour
3 Eggs at room temperature
Pinch of salt
Method
1) In a large mixing bowl, add the flour and salt.
2) Beat the eggs for 3 to 4 mins and add to the flour.
3) Start to mix the flour and egg till it forms a sticky dough.
4) Transfer to the worktop and add 1 tablespoon of flour and knead the dough till it is firm and soft.
5) Cover and chill for 30 mins.
6) Once you are ready to assemble the Lasagna, divide the dough into 6 pieces and roll out to 1.5 cm thickness, and place directly on each layer.
Ingredients for Chicken in Tomato Sauce
3 tablespoons olive oil
2 tablespoons butter
1 onion finely chopped
9 – 10 cloves garlic minced
5 cups boiled and shredded chicken
10 tablespoon tomato purée
Method
1) Heat the oil and butter in a pan.
2) Add the chopped onion, cook for 2-3 minutes until tender, stirring occasionally and add the minced garlic, cook for another 2 minutes.
3) Add the tomato puree and chicken. Season with salt, pepper and chilli flakes. Mix well to combine, and cook for about 5 minutes.
Ingredients for Spinach and Corn in White Sauce
5 tablespoons butter
5 tablespoons flour
350 – 400 ml warm milk
1 onion finely chopped
9 – 10 cloves garlic minced
3 cups shredded fresh spinach
1/2 cup frozen Corn
Method
1) Heat butter in a pan, once melted add the flour and cook till the flour is cooked but has not turned brown.
2) Slowly add the warm milk and keep on whisking to make sure there are no lumps. Cook for 5 – 7 mins.
3) In another pan heat a tablespoon of oil and add the chopped onion, cook for 2-3 minutes until tender and add the minced garlic, cook for another 2 minutes, add the spinach and cook until the spinach has shrunk in size and is tender about 5 minutes. Turn off the heat.
4) Mix with the white sauce. Season with salt and pepper.
Let’s Get Ready To Assemble
Method of Layering the Lasagna
1) Preheat oven to 180 C.
2) Grease the baking dish with a little butter.
3) Put in a thin layer of the Chicken in tomato sauce. Place the thinly rolled fresh Lasagna sheet. On this pour some of the Spinach and Corn mixture.
4) Repeat the layering of lasagna sheets -> chicken in tomato sauce mixture -> lasagna sheet -> spinach and corn mixture -> finally cover with 1 cup grated mozzarella cheese.
5) Bake at 150C for 30 – 40 minutes.
6) Garnish with fresh herbs and serve with Garlic Bread.

* I made a Combo of Veg and Non Veg, you can make either one.
** You can use the readymade Lasagna sheets but these fresh ones taste so much better!
